Baked Blueberry Oatmeal

This amazing breakfast dish from Feel Good Foodie is like a combination of granola and overnight oats. Incredibly easy, it mixes up right in the baking dish. I increased the maple syrup a bit from the original recipe and added 4 scoops of unsweetened, unflavored protein powder. There are also lots of way to tweak the additions of nuts and fruit. Preheat the oven to 375 degrees

Mix in a 9×13 baking dish:

2 cups old fashioned rolled oats (not quick)

3/4 cup pecans (or other nuts) roughly chopped

 1 ½ teaspoons cinnamon

 1 teaspoon baking powder

 ¼ teaspoon salt

4 scoops of non flavored, unsweetened protein powder (if desired)

Whisk in a bowl and add to oats:

2 cups almond milk

 1/3 cup maple syrup

2 tablespoons ground flaxseed

 2 tablespoons coconut oil melted

2 teaspoons vanilla extract

Press into the mixture:

1 ½ cups blueberries

Bake for 35-40 minutes. Enjoy hot out of the oven or store in the refrigerator for ready made breakfasts all week. Add a topping of Greek yogurt and, fresh fruit and maple syrup for a solid breakfast!
