Salted Maple Sugar Caramel Popcorn Crunch

This treat is simply other worldly. It’s a delicious combination of salt and sweet, punctuated by the pleasing crunch of popcorn and peanuts. The Salted Maple Sugar Caramel is a delicious addition, adding the flavor of caramelized maple. This treat is excellent as a packaged gift. Drop some off on a neighbor’s porch, bring a bag to a friend who needs a lift or make a big batch and drop it off at your favorite local hero’s place of work. Of course, you and and your family should keep a stash at home as well!

Pop 1 bag of popcorn. Preferably something with little or no butter flavor, but whatever you have will do!

Mix popcorn in a bowl with 1 jar of Couching Lion Sugar Farm Salted Maple Sugar Caramel and 1 cup of unsalted peanuts. 

Pour mixture into a large, heavy bottomed cookie sheet. Cook at 250 degrees for 60 minutes. Stir well, every 15 minutes.Pour mixture onto wax paper.

Heat 3/4 cup milk chocolate chips in a double boiler. Remove as soon as some chips begin to melt, and stir until all are melted. Pour chocolate over the popcorn/peanut/caramel mixture.

***Note on melting chocolate: I have learned that chocolate is a very delicate substance that cannot tolerate much heat. I put it on the lowest burner and stir consistently until 2/3 are melted and then I remove the pot and continue to stir. If you use too much heat too quickly, you will end up with a chocolate ball that will never be right again!

Allow to cool completely. Break the chunks into the desired size.Enjoy!
